Experienced Pizza Cook (Scratch Dough)

Location: West Springfield, MA

Compensation: $25.00 – $28.00 per hour (based on experience)

Job Type: Full-Time / Part-Time

Position Overview

We are looking for a highly skilled and passionate Pizza Cook to join our kitchen team in West Springfield. In this role, you will be the driving force behind our pizza program, responsible for mixing, proofing, and hand-stretching fresh dough daily. The ideal candidate has a deep understanding of dough hydration and fermentation, moves efficiently in a high-volume environment, and takes immense pride in crafting the perfect pie from scratch.

Core Responsibilities

• Dough Production: Prepare handmade pizza dough daily according to exact recipe specifications, closely monitoring temperature, hydration, and proofing times.
• Prep & Station Management: Prepare high-quality sauces, slice fresh toppings, and ensure the pizza station is fully stocked and organized before and during service.
• Hand-Crafting: Hand-stretch dough to order, apply toppings consistently, and maintain strict portion controls.
• Oven Management: Expertly load, rotate, and pull pizzas from the oven, maintaining ideal oven temperatures for a consistent, perfect bake.
• Quality Control: Inspect every pizza before it leaves the station to ensure it meets our quality and presentation standards.
• Sanitation: Maintain a rigorously clean work area, complying with all local health department regulations and food safety guidelines.

Qualifications & Requirements

• Experience: Minimum of 2–3 years of experience specifically working as a pizza cook in a high-volume, scratch-kitchen environment.
• Dough Expertise: Demonstrated experience making and working with fresh, handmade dough (knowledge of proofing and yeast behavior is required).
• High-Volume Capability: Ability to remain calm, organized, and fast-paced during peak dining rushes.
• Physical Stamina: Ability to stand for long periods, work in a hot environment, and lift up to 50 lbs (flour bags).
• Team Player: Strong communication skills and a willingness to support the broader kitchen team when needed.
• Certification: ServSafe or equivalent food handler certification is a plus.
